HOW TO COOK: Bring 1 1/2 cups of water to a boil. Add 1/2 tsp salt and 1 tsp butter or olive oil if desired. Stir in 1 cup pearl couscous. Cover with a lid, reduce heat to low, and simmer 8-10 minutes, stirring occasionally. Yields approximately 2 cups.
